Drool worthy muffins.

I made some more banana-chocolate chip muffins today, they seem to be a healthier snack option that’s a hit in this house. Of course that means I used up all of the frozen banana’s that we had stashed in the freezer except for 2. Bummer because you need 3 banana’s for the recipe that I have. I’ve been experimenting with the recipe and the cooking time and I think that I’ve finally mastered it.Baking1Start off by placing a mixing bowl, two measuring cups (if you have), measuring spoons and a spatula on your work space (the counter). Once you’ve got that go and grab the dry ingredients out of the cupboard (sugar, flour, baking soda, walnuts (if you want to put walnuts instead of chocolate chips). Take your eggs out of the fridge, and your chocolate chips out of the freezer if you decided that you are going to do chocolate chip banana muffins. I love to keep my chocolate chips in the freezer… I know some people put them in the cupboard but I don’t want ours melting.baking2Next you are going to cream 1/2 cup of butter in with 1 cup of sugar. Proceed by adding in the 2 beaten eggs. Mix in 2 cups of flour & your 1 teaspoon of baking soda.baking3The recipe says to crush the 3 bananas and walnuts(or chocolate chips) and to mix them in. I actually don’t do that, I mix the bananas in with everything using my hand mix master then I place a thin layer of chocolate chips on the top then mix it again.baking4Then you can either pour it into a loaf pan and make yourself some bread or you could pour it into some muffin tins and make yourself and the kids some muffins for quick snacking on the go. 🙂

My oven is pretty old school, so it might be different for you but I bake mine at 350* for 18 minutes. I’ve never actually made the loaf (I’ll be trying that in a couple weeks), just the muffins so that might need to be tweaked. Just check it with a toothpick and make sure it comes out clean. Ta-da now you have something delicious!baking5
