It’s my birthday, and I’m feeling 25.

Posted on April 27, 2015 by Erika Scott

Happy birthday to me, happy birthday to me, happy birthday dear Erika, happy birthday to me!! Today I turned the big 25, I’m officially two and a half decades old eeek! (Are you curious what happened when I turned 24? Click here.) Lately I haven’t been able to fall asleep, so I was up at 3 AM. I wanted to make something special for my birthday, especially since this year it was just the kids and I celebrating no cake. I was also craving some banana chocolate chip muffins, recipe here. Instead of making my usual muffins, I decided I would finally attempt to make the loaf that I’ve been postponing (same recipe but the bake time was roughly about 31 minutes.) The top appeared cooked but once we cut into the loaf, underneath the top layer it wasn’t fully cooked. You might have to cook it a little bit longer, depending on how old your stove is lol. Everyone still enjoyed it, and I thought it was awesome. I’m just more fond of the simplicity of the grab and go that the individual muffins have.birthday1Fast-forward-6:40AM, I woke the kids up so Keera could get ready for school. She wasn’t in the mood for pictures, but once we got to the bus stop to drop her off she was much happier.Birthday2After breakfast Zaden, Emilee and I watched some Avengers Assemble episodes on Netflix. It was a pretty relaxing morning, and then around 11AM the doorbell rang. I went and answered it, there was two women standing there. One of them was holding a box that had a vase full of flowers, and the other had a fruit basket with a single large chocolate bar amazing. I was SO surprised, I wasn’t sure who had sent them and I seen a card from my mom. I love that even though she was in Jamaica, she still managed to do something to make me feel special on my birthday.Birthday3birthday4The flowers are gorgeous I haven’t received a bouquet that big in a long time, and the fruit is so good as well. Yesterday night I cooked a roast for supper and we never ate it (decided to have something else.) So for my birthday supper I decided we would have the roast, and we cooked some fresh vegetables.supperInstead of a birthday cake this year, I made a Rice Krispie circle, to make them special I cut them into heart shapes.Rice+KrispiesThen around 8:30PM the kids headed to bed, and I enjoyed a quiet evening of Netflix. It was overall a awesome day.
