If you had told me years ago that I would have a fridge full of tomatoes, I would think you were nuts. I know it sounds bizarre, but despite liking ketchup I never liked tomatoes. Then one day when I was pregnant with my son, I tried out a tomato sandwich for the first time in years and I’ve been hooked ever since. Every one of pregnancies has expanded my taste buds. Before I got pregnant with Emilee (my youngest), I hated the taste of salsa. Then once she was born, I couldn’t seem to get enough of it. I love to have salsa on my burritos, on eggs, on tacos, and chips. You get the point, I love salsa now. I usually go to the store, and buy a big jar of it. If you think about it, it can get pretty pricey. Rushing off to the grocery store to get salsa, can trigger a shop. Lol what I mean by that is sometimes when you need something, you’ll go to the store to get that one item; but then you’ll leave the store with ten more items you probably don’t need. It’s frustrating and I’m sure I’m not the only one that does it. I’ve been off work for a little more than a week now, and I’ve still got a few more days off (my mom is off in Japan) I’m so jealous! Anyways back on topic, I’ve got a ton of tomatoes in my fridge. Despite the kids and I eating some every morning for breakfast, I don’t think we’ll be able to finish them off alone. So I got this awesome idea to find a recipe to make some salsa.
I ended up finding a recipe that seemed quite simple, and straightforward (CLICK HERE if you’d like to see the original posters post.) I still had to make a run to the store for a couple of things, such as garlic, fresh Cilantro, cumin, onion, and lime juice. I wasn’t kidding guys when I said a trip could cause a shop trigger, while I was at the store I ended up buying some canning jars for the salsa. Did I need them, not really but a part of me had to have them I mean everything looks pretty in a glass jar right? 😛
Ingredients you’ll need:
- 2 Medium tomatoes
- 1 15 oz can of diced tomatoes
- 2 cloves of minced garlic
- 1 Tablespoon chopped of fresh Cilantro
- 3/4 teaspoon Cumin
- 1/2 Tablespoon salt
- 1/2 teaspoon of pepper
- 2 Tablespoon of lime juice
- 1/4 small sweet onion
From there it’s pretty straight forward, just mix everything together gently into a bowl. This recipe is super quick to make, and it tastes awesome. I made some a couple of days ago, and it’s already almost completely devoured.I’ve got to say that I’m really liking this whole, making stuff from scratch at home thing that I’ve been doing. I know some of the things, do end up being time-consuming but the taste is so much better than buying it at the store. This whole process has been a learning thing for me, before a couple of days ago I had no idea how to use fresh Cilantro. I’ve used spices in my cooking, but most of it’s in a jar stuff like Epicure, Garlic Plus, and Mrs. Dash. Five years ago I had my own (and very first) spice rack, I never used half of it then the rest I would just throw in a dish. I had no clue what I was doing, thankfully everything I ended up making tasted good. Now thanks to Google, and YouTube for coming to my rescue I’ve got some sort of idea on how to use fresh herbs. I know how intimidating it can be to get into the kitchen, especially when your trying to make all sorts of new recipes alone. I’m really enjoying the discovering process though, and the best part is I’ll be able to show my kids how to do it (without them having to use the internet) 😉
