I was checking out food recipes on Pinterest several days ago, because I don’t know anyone that doesn’t like “pinning” recipes. There is so many delicious looking recipes around the web, then I noticed a friend of mine had pinned a recipe for a Saskatoon pie. It got me thinking, I should definitely make another pie. I didn’t have any Saskatoons, but with a quick trip to the grocery store I could buy some corn starch. Which meant I could use the five cases of strawberries that I’ve got in my fridge, to make a strawberry pie its perfect timing. My first attempt at making a pie turned out good, everyone liked it and let’s be honest it was peach pie. :/ If you want you can check out my first pie here. So for this particular Strawberry Pie you’ll need the following ingredients to make the pie filling:
- 4 cups of strawberries
- 1 cup sugar
- 3 Tablespoons corn starch
- 1/4 teaspoon of salt
- 1 Tablespoon of lemon juice
- *Optional whipped cream
{If you want the pie crust recipe that goes with this pie scroll to the bottom of this post. I also feel like I need to point out the obvious, that I didn’t use the pie crust recipe.}
Step one: You’ll want to mash-up some strawberries, until you get about 2 cups. When I first started the recipe, I cut up and washed all of my strawberries. I didn’t measure them out, until it came time to mash-up two cups.Step two: Combine together in a pot 1 cup of sugar, 3 Tablespoons corn starch, 1/4 teaspoon salt, and your 2 cups of mashed up strawberries.
Step three: Once all of your ingredients are mixed together, cook to a light boil. Once your mixture has reached a boil, remove it from heat and add in your 1 Tablespoon of lemon juice.Step four: Let your mixture cool down, and put 2 cups of fresh strawberries in the bottom of your pie crust. I didn’t measure my strawberries for the bottom of my pie, I just used what strawberries I had left. I suggest that you cut the strawberries according to your preference.
HEADS UP! This is the part of the recipe that I decided to go my own way.
Step five: Add cooled filling on top of your cut up strawberries. If you are wanting to follow this recipe it says to let your pie chill, then *optional add whipped cream on top before serving. However this is the part that I decided to go into uncharted territory, and see what happens lol.
Step six (**if you want to try it my way**): I used uncooked frozen pie crust, and I wanted to do crisscrosses for the top of my pie. So once I put the cooled berries on top of the fresh berries, I took another pie crust and cut it with my pizza cutter. I did crisscrosses on the top of my pie, then I put it into the oven. I baked my pie until the top crust was “golden brown” in my opinion. 😛I realize that this pie was meant to be eaten cold, but my kids and I thought it tasted pretty darn good baked. Although being honest the filling didn’t stay in place when I cut the pie into pieces, it was a bit runny. Now that I’ve got two successful pies under my belt experience wise. {Just to clarify my idea of a success is if someone other than myself likes the way something I made tastes.} I’m thinking the next time it might be time to attempt a pie, where I make the pie crust from scratch. Once the pie finished cooking, I took the kids to Starbucks for a quick treat. Since we had to wait for the pie to cool off, and the smell was making the waiting very difficult!
Suggested Pie Crust for the original recipe:
- 1 cup sifted flour
- 1/2 cup Crisco
- 1/2 tsp. salt
Blend the ingredients together, make sure you use just enough cold water to mix them together; without making them sticky. Bake the crust at 375 until down (Light Brown.)
