Less than a week ago, we went and bought a ton of produce. Among our goodies, we had more than enough peaches. We don’t usually buy peaches, so it was a nice change. Although now I’ve got little fruit flies flying all around my kitchen, because the peaches are starting to go bad. I know if I don’t decided to do something with them now, they’ll end up in the garbage. I hate being intentionally wasteful, especially when I can do something to prevent it. I could easily cut them up, and pop them in the freezer. They would go great in a smoothie, but I’m feeling wild. I want to get out of my comfort-zone, and attempt something I’ve never done before. I want to try to make a pie. Now as much as I want to get creative, I also don’t want to spend a fortune on a ton of ingredients. So I ended up searching on Pinterest for “Peach Pie”. I was on the search for two specific things; a) a delicious looking peach pie and b) a list of fairly simple ingredients. I ended up finding Natasha’s pie recipe. She’s got step by step instructions, with beautiful pictures that seemed easy enough to follow. When you click her pie filling recipe, she even has a recipe for pie crust. I didn’t want to overwhelm myself, since this was my first attempt at making a pie ever. So I went to the store and bought a couple of large pie shells, and a couple of small ones. Luckily I had all the other ingredients in my cupboard. The ingredient’s you’ll need to make the pie filling is: peaches, lemon juice, sugar, flour, vanilla extract, nutmeg and salt.
You’ll need two bowls, one for your peaches and wet ingredients. Then another for all of your dry ingredients. In one bowl mix together all of your dry ingredients: 1/2 cup sugar, 1/2 cup flour, 1/4 tsp nutmeg, and 1/8 tsp salt. Once you’ve done that set the bowl aside. Wash, peel and pit your peaches, then cut them according to size preference. Put them in the second bowl, I personally didn’t measure out my peaches. I just used all the peaches I had leftover.
Add to the peaches 1/2 teaspoon of vanilla extract, and 1 tablespoon of lemon juice then mix. After you’ve finished that slowly add your dry ingredients on top of the peaches. Now that you’ve got all the ingredients together, stir gently until combined. Turn on your oven to the temperature suggestion’s that are on the back of your pie crust box, or if you used another pie crust recipe use that suggested baking time for the pie.
While your oven is preheating, make sure you’ve got the pie crust base ready to go. Add the pie filling then cover your pie with another pie shell, or you make it crisscrossed. If you used store-bought pie crust, and you want to make a fancy top for your pie. Just take out another pie crust the same size as the bottom one, and flatten it out.I ended up using a pizza cutter, to cut the crust into thin strips. I then crisscrossed the strips on top of the pie until I was satisfied with the appearance. There’s no right or wrong way, make the pie your own unique design. 🙂 By now the oven should be done preheating, and it’s time to get that pie on a baking sheet. Mix up an egg and coat the top of your pie with a brush. Afterwards pop it in the oven to bake, I set a timer for 20 minutes then checked on it. I noticed it wasn’t ready, so I just kept an eye on it until it was golden brown. Roughly about 30-35 minutes, the time could be different depending on your crust.Once it’s finished baking, make sure that you place your pie on a cooling rack/ pot holder to cool for a couple of hours. I covered my pie with some aluminum foil, once it had finished cooling down. Overall I did a pretty good job I think, the kids really liked the pie. They even asked for seconds. 🙂
