Years ago, and I’m talking roughly six years ago I made this dish for the first time. No it’s nothing fancy, heck it’s a common dish Chicken Alfredo. Since that first time I’ve made this recipe, I’ve probably made it at home a handful of times. It’s not in our weekly meal planning, it’s more of a “when in the mood” type of dish. That honestly if I’m craving, I usually go to eat it at the restaurant.
The recipe requires three simple ingredients, chicken breast, some pasta sauce, and some pasta noodles. For this particular recipe, I really like to use the Olivieri Three Cheese Rainbow Tortellini. It took me some time to find it since it’s been years, but depending on where you shop you’ll find it in the Deli area of the store. I also buy the Classico brand of Alfredo & Roasted garlic sauce, because garlic adds a nice touch to most recipes.You could probably just throw the chicken breast, along with the sauce on low in the crock-pot for a couple of hours. It would make a great quick meal idea, in case it’s 1pm and you forgot to plan something for dinner. This can cook during the afternoon, and it would be ready by the time you and the kid(s) get back from their after-school extracurricular activities.
That’s not how I cooked mine though, I put mine in some of my corningware dishes and baked it in the oven. Corningware isn’t considered an “old person” thing is it? I mean the dishes I’ve got are from my mom, so they are 10 plus years old but they are fantastic to cook with.
It took my chicken breast roughly half an hour to cook, and I had the temp set to 400*. Keep in mind the cooking time may vary depending on your oven, so make sure you check your chicken breasts to make sure that they are properly cooked.Ten minutes before my chicken was supposed to be done, I started cooking my pasta noodles. If you plan this correctly, your pasta noodles and chicken should be finished cooking at the same time. I divided up the chicken breasts, then poured the remainder of the Alfredo sauce in with the drained pasta.I let the sauce heat up with the noodles on the stove for a few minutes, and then dished everyone out. Voilà you’ve got yourself chicken Alfredo, or whatever lol. If you want you can cut up the chicken, and mix it in with the pasta for the classical Chicken Alfredo dish.This isn’t meant to be a difficult recipe, after-all it only requires three ingredients.Feel free to play around a bit and try different types of sauces, It doesn’t have to be anything fancy it’s just something different during the week. Too often we get stuck in a rut of cooking the same meals week after week, if you aren’t careful it can get quite boring and repetitive.
I know pasta in our house is usually always a winner, my kids love pasta as much as I do. This dish was a crowd pleaser to all three of them.. Except they requested I use different noodles next time, simply because they didn’t like one of the three cheese flavors.
I really want to try a Jambalaya Fettuccine copycat recipe of Boston Pizza, but I don’t think the kids would like how spicy it is. Spicy food is really only my thing, the kids like more plain tastes. So I like to experiment with different foods when their gone for a sleepover lol, then if I think it’s something they’d like I make it for them when they come home.
It’s a win, win.
