We had a busy morning, and a busy afternoon. Next thing you know I catch a glimpse of the microwave it’s already four o’clock. Supper time was rolling around fast, and I was starting to panic I didn’t want to make a run to the grocery store. After checking the cupboards, the fridge and both the fridge freezer and deep freeze. I found a Tinga chicken taco kit, but no chicken. So I grabbed the hamburger meat from the freezer to defrost, and made sure we had the other taco ingredients. We also had some extra tortillas from a couple of nights before, PERFECT.
Lettuce: check.
Tomatoes: check.
Cheese:check.
Sour-cream: check.
We had some leftover rice from the night before, so I took that out and reheated it. I made the kids each a taco, with their requested ingredients; meat, lettuce, tomatoes, cheese and sour-cream.
Every time we have tacos I make the kids each one, and by the time I get around to making myself one; they’ve already finished the one they had and want some more. So I end up giving them my taco, seven tacos later it was finally my turn to eat! The kids finished off the lettuce, so I decided I’d have some rice in mine instead. Which I suppose makes my taco a burrito? Either way, I’m super pleased with this meal and the kids enjoyed it as well. The taco mix made the beef a bit spicy, but it was just the right amount of kick.
